Ratatouille
Ratatouille is an impressive dinner. Made with 1 eggplant, diced, 2 cloves minced garlic, 1 large thinly sliced onion, 1 green pepper, cut in thin strips and 1 medium zucchini, sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute garlic and onions in oil until soft.
Add green peppers, eggplant and zucchini.
Cook 5 minutes over medium heat, tossing well.
Add tomatoes with liquid and seasonings.
Simmer until just tender (about 30 minutes).
Cover last 15 minutes.
Add mushrooms during last 10 minutes.
