Ratatouille
Ratatouille is an moderately easy dinner. Made with 3 tbsp. vegetable oil, 1 1/2 c. chopped onion, 1 clove garlic, minced, 1 lb. eggplant, peeled and cut into 2-inch strips and 4 tomatoes, coarsely chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a 12-inch electric skillet, heat oil to 300Β°.
Saute onion and garlic until tender but not brown, about 3 minutes.
Add remaining ingredients.
Bring to a boil.
Cover and turn heat control down until light goes out (simmer point).
Simmer approximately 25 to 30 minutes or until vegetables are tender but not overcooked.
