Ratatouille
Ratatouille is an moderately easy dinner. Made with 2 garlic cloves, chopped, 1/2 medium bell pepper, chopped, 1 medium onion, chopped, 1 zucchini, chopped and 2 yellow squash, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a skillet, place a very small amount of oil or spray with nonstick spray.
Saute garlic, bell pepper and onion until tender. Add zucchini and yellow squash.
Add tomatoes and sauce and cook 5 minutes on medium-low heat.
Add Minute rice and cover.
Simmer 20 minutes or until rice is tender.
Salt and pepper to taste.
