Ratatouille
Ratatouille is an moderately easy French dinner you can prepare in just 58 minutes. Made with large zucchini, sliced 1/8-inch thick, large yellow summer squash, sliced 1/8-inch thick, large onions, cut in slivers, (20 oz.) can stewed tomatoes and c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Pour stewed tomatoes, water and spice in a large pot with garlic, pepper and crushed red pepper.
When mixture comes to a boil, stir in onions, zucchini and yellow squash.
Stew (boil) for 2 hours, stirring every 15 minutes.
Serve in individual bowls; garnish with freshly grated cheese.
