Raisin Pie
Raisin Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 4 tbsp. flour, 1 egg, well beaten, 3 tbsp. lemon juice and 2 tsp. grated lemon peel, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix sugar, flour and egg, then add lemon juice and lemon peel, salt, raisins and water.
Cook over hot water for 15 minutes, stirring occasionally.
Pour in lined 9-inch pie pan.
Bake at 450° for 10 minutes.
Reduce heat to 350° for 25 to 30 minutes or until brown.
Makes 1 (9-inch) pie.
