Raisin Pie
Raisin Pie is an moderately easy dinner. Made with 2 2/3 c. raisins, 1 c. granulated sugar, 1 large beaten egg, 2 rounded tbsp. flour and 2 rounded tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put raisins in large saucepan.
Cover with water, plus that amount of water also.
Simmer until raisins are plump.
While raisins are cooking, mix together the sugar, egg, flour and cornstarch.
Pour small amount of hot liquid into the sugar-egg mixture, then gently pour all this into raisins.
Stir constantly; it will thicken quickly.
Remove from heat.
Let cool while fitting crust in pie pan.
