Butter an 8 x 5-inch loaf pan.

Chop the spinach.

Grate the carrot.

Chop the scallion.

In a large bowl, combine flour, 2 tablespoons Parmesan, sugar, baking powder, salt, thyme and nutmeg.

In a separate bowl, combine the milk, oil and egg.
