Quick Peanut Brittle
Quick Peanut Brittle is an easy dinner. Made with 1 c. sugar, 3/4 c. light corn syrup, 1 tbsp. water, 2 to 2 1/2 c. raw spanish peanuts (any shelled peanuts are fine) and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine sugar, syrup and water in heavy iron skillet.
Bring the mixture to a boil at low to medium heat.
Add peanuts and boil until syrup is light tan, about 6 minutes from time it begins to boil after the nuts are added.
Remove from heat and add the baking soda.
Stir briskly and quickly.
Spread out on a cookie sheet.
When cool, break into pieces.
