Quick Herbed Zucchini
Quick Herbed Zucchini is an moderately easy dinner. Made with 2 large zucchini, 3 tbsp. butter or margarine, 2 medium onions, coarsely chopped, 1/2 tsp. salt and 1/2 tsp. dried thyme leaves, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Slice the zucchini in 1/4-inch slices.
In a heavy skillet, saute the zucchini in heated butter for 3 minutes, turning once. Remove from the pan and set aside.
In the same pan, saute the onions until soft, but not browned.
Combine the zucchini with the onions.
Add the salt and herbs.
Heat slowly over low heat.
Add the cream, if used.
Heat but do not boil.
Arrange on a serving platter, garnish with parsley.
Makes 4 servings.
