Quick Carrot-Nut Bread
Quick Carrot-Nut Bread is an moderately easy dinner. Made with 1 1/2 c. sifted all-purpose flour, 1 1/2 tsp. baking soda, 1/4 tsp. cinnamon, 3/4 c. sugar and 2 beaten eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350Β°.
Sift together flour, baking soda and cinnamon.
Add sugar, eggs, vegetable oil, vanilla and salt. Blend in with a few swift strokes the carrots and nuts.
Bake in a greased pan 1 hour.
Cool in the pan 10 minutes, then turn out onto a rack for further cooking.
Makes one 5 x 9-inch loaf.
