Quick Cabbage Saute
Quick Cabbage Saute is an moderately easy dinner. Made with 2 tbsp. pine nuts, 3 tbsp. peanut oil or safflower, 1 leek (white only), finely chopped, 2 carrots, peeled and julienned and 1/2 sweet pepper, seeded and julienned, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large skillet, toast pine nuts over medium heat for 3 to 5 minutes.
Shake pan constantly to avoid burning; remove and set aside.
In same skillet, heat oil over medium heat.
Saute leek until slightly softened, about 2 minutes.
Add carrots and red peppers; saute about 3 more minutes.
Add cabbage; saute until just wilted (approximately 3 minutes).
Add chili paste, soy sauce, sherry, salt and pepper to taste.
Stir to combine.
Bring to boil for 1 minute.
Add pine nuts.
Serve immediately.
Serves 4 to 6.
