Quahaug Chowder
Quahaug Chowder is an moderately easy dinner. Made with 1 qt. drained quahaugs, 1 qt. broth, 1 qt. water, 10 lb. diced potatoes and 1/2 lb. salt pork, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry salt pork until brown.
Add onions and brown.
Remove from heat.
Add 1 cup broth and 1 cup water until 3 cups of each have been added.
Add potatoes and cook about 10 minutes.
Add quahaugs and 1 more cup of broth.
Add tomato soup and water.
Let simmer until potatoes are cooked.
