Pumpkin Rolls
Pumpkin Rolls is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. soda and 3/4 c. plain flour, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Preheat oven to 375Β°.
Grease cookie sheet.
Beat eggs with 1 cup sugar until mixture is light and creamy.
Add pumpkin, soda, plain flour and cinnamon.
Mix well.
Pour into prepared pan. Sprinkle with chopped nuts (better without).
Bake 15 to 20 minutes.
When done, turn onto clean towel that has been sprinkled with powdered sugar.
Roll up like jelly roll (in towel) until completely cool.
When cool, unroll and spread with mixture of cream cheese, 1 cup powdered sugar, margarine and vanilla.
Now roll.
Wrap in foil and refrigerate.
Freezes well.
