Pumpkin Roll
Pumpkin Roll is an impressive dinner. Made with 3/4 c. all-purpose flour, 3 eggs, 1 c. sugar, 1 tsp. lemon juice and 3/4 c. cooked pumpkin, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat eggs and sugar together.
Stir in pumpkin and lemon juice.
Sift flour, baking powder, salt and cinnamon together; fold into pumpkin mixture.
Grease and flour a 15 x 10 x 1-inch pan.
Spread batter evenly in pan.
Sprinkle nuts on top; bake for 15 minutes at 375Β°.
Sprinkle powdered sugar on a clean dish towel; turn cake out on towel.
Sprinkle powdered sugar on top of cake.
Roll long side of cake and towel together; let cool.
While cake is cooling, beat together the last 4 ingredients.
Unroll cake; spread this mixture over top.
Roll back up and chill. Slice and eat.
