Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 1 tsp. lemon juice, 3/4 c. all-purpose flour, 1/2 tsp. nutmeg and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat eggs on high for 1 minute, then add sugar, lemon juice, spices, salt and soda.
Mix well, then fold flour and pumpkin in. Spread on greased cookie sheet, then sprinkle with nuts. Bake at 375Β° for 10 minutes. Turn out on towel and sprinkle with powdered sugar and roll up with towel.
Let cool.
When cake is cool, unroll and spread with filling.
