Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 1 c. white sugar, 2/3 c. pumpkin, 3 tsp. lemon and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Beat eggs for 5 minutes with mixer.
Add next three ingredients to the beaten eggs.
In a separate bowl mix together baking powder, cinnamon, ginger, nutmeg and salt.
Add flour mixture to egg mixture and beat.
Pour onto greased and floured jelly roll pan and top with chopped walnuts.
Bake at 375Β° for 8 to 10 minutes. Invert and roll, (hot) in a thin dish towel.
Sprinkle with powdered sugar, cool.
