Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. lemon juice and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Beat eggs for 5 minutes, then gradually add the sugar.
Stir in the pumpkin and lemon juice.
Mix dry ingredients together; add to pumpkin mixture.
Spread in greased and floured 15 x 10-inch pan.
Top with the chopped nuts.
Bake at 375Β° for 15 minutes. Turn out on a towel which has been sprinkled with confectioners sugar.
Starting at the narrow end, roll towel and cake together. Cool.
Unroll.
Fill with filling; re-roll cake.
Chill before cutting into slices.
