Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. lemon juice and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Spray 15 x 10 x 1-inch pan with Pam.
Beat eggs at high speed for 5 minutes, gradually add sugar beating well after each addition.
Stir in pumpkin and lemon juice.
Sift together all dry ingredients, except nuts.
Fold in pumpkin mixture.
Spread into pan and bake at 375Β° for 15 to 18 minutes.
Turn onto towel that has been dusted with 4x sugar.
Roll in towel and let cool.
