Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 2/3 c. pumpkin, 1/2 tsp. baking soda, 3/4 c. flour and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Line a 10 x 15-inch cookie sheet with wax paper.
(You don't need to cover the sides.)
Grease wax paper with margarine or shortening.
Mix ingredients together; pour in center of the pan. Spread to about 9 x 13 inches.
Sprinkle with chopped nuts.
Bake for 8 to 12 minutes at 375Β°, until surface looks dry and no longer sticky.
(Wax paper will smoke some.)
Invert onto a tea towel covered with powdered sugar.
Peel off wax paper.
Roll cake in tea towel lengthwise until cool.
When cool, unroll carefully and spread filling.
