Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 1 tsp. lemon juice, 1 tsp. soda and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Beat eggs on high speed of electric mixer for 1 minute; add sugar and lemon juice, beating well.
Add soda, salt and spices.
Fold in flour and pumpkin until well combined.
Spread batter onto a greased cookie sheet or jelly roll pan.
Sprinkle with chopped nuts.
Bake at 375Β° for 20 minutes.
Turn cake out onto a towel that has been sprinkled with powdered sugar and roll up, jelly roll fashion.
When cake is cooled, unroll and spread with filling.
Re-roll filled cake, wrap in foil and store in the refrigerator until serving time.
