Pumpkin Pudding
Pumpkin Pudding is an moderately easy dinner. Made with 1 (16 oz.) can pumpkin, 1 (12 oz.) can evaporated milk, 2 large eggs, 1 tbsp. cornstarch and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Whisk together all ingredients until smooth.
Pour into 3-quart microwave-safe bowl.
Cover with vented plastic wrap. Microwave on High 10 minutes, whisking after 5 minutes.
Whisk again, then microwave on Medium-high for 5 minutes.
Whisk, then let stand, covered, about 20 minutes.
Makes 5 cups.
