Pumpkin Pie
Pumpkin Pie is an moderately easy dinner. Made with 2 c. cooked or canned pumpkin, 1 1/2 c. evaporated milk or cream, 1/4 c. brown sugar, 1/2 c. white sugar and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Line a 9-inch pie pan with dough.
Mix until well blended all ingredients.
Pour into pie shell.
Bake 15 minutes at 425°. Reduce heat to 350° and bake about 45 minutes longer, until an inserted knife comes out clean.
I make a strip of aluminum foil to cover the edge of pie crust.
It keeps it from getting too brown. Beat a half pint of whipping cream with 1/4 cup of sugar in a glass bowl until stiff for topping.
