Pumpkin Nut Roll
Pumpkin Nut Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. lemon juice and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Beat eggs and sugar 5 minutes.
Mix together pumpkin and lemon juice and add to first mixture.
Sift together flour, baking powder, cinnamon, ginger, nutmeg and salt and add.
Spread evenly in a jelly roll pan which has been greased and floured. Line the pan with wax paper. Sprinkle walnuts over the batter. Bake at 375Β° for 10 to 15 minutes. Sprinkle a dish towel with powdered sugar.
