Pumpkin Cake

Combine sugar, pumpkin, oil and eggs
Beat 1 minute
Combine dry ingredients except for coconut and nuts
Add to sugar mix in 3rds, mixing well
Stir in coconut and nuts
Bake in 350Β° oven in 3 floured 8-inch pans (square or round) or in large tube or Bundt pan
Eight-inch takes 25 to 30 minutes
Takes a little longer for tube or Bundt
Frost with Cream Cheese Frosting
Cool 10 minutes in pan and then cool completely before icing.
