Put sugar, water and butter in a saucepan.

Without stirring, cook until a little of the boiling syrup dropped in cold water makes a hard ball or is brittle.

Flavor with 5 to 10 drops of oil of peppermint or to suit taste and pour out on a marble slab or platter.

When cool, pull until light.

Make a long roll and cut into cubes with scissors or cut into finger length pieces.

Fold 2 ends together and cut across the center.

This will give a twisted effect and make the right size.

When candy is cut, put in a tightly closed tin box and leave for 8 to 10 hours to cream.
