Pseudo Crab Cakes is an moderately easy dinner. Made with 2 c. zucchini, grated, 3/4 c. bread crumbs, 1 tbsp. italian seasoning, 1 tbsp. old bay seasoning and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix all ingredients together in large bowl.
Make cakes as you normally do for crab cakes.
Fry medium-high until golden brown. Turn on other side (not you, the cakes).
Fry until done.
