Prune Muffins
Prune Muffins is an moderately easy dinner. Made with 1 1/2 c. sugar, 2 c. all-purpose flour, 1 tsp. baking soda, 1 tsp. baking powder and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

If you use the processor or blender to chop prunes, add a little water so you will get a paste like mix.
Mix together sugar, flour, baking soda, baking powder and spices.
With mixer, add the eggs, buttermilk, oil and prunes; mix well.
Put in paper cups in muffin pans.
Bake at 350Β° for 25 to 30 minutes.
Makes about 2 dozen.
They freeze well.
