Pralines is an moderately easy dinner. Made with pecans (enough to make 2 c. pecan meats), 2 tbsp. butter, 2 c. sugar, 1 c. maple syrup and 2/3 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Shell enough pecans to make 2 cups pecan meats.

Melt butter in saucepan.

Add sugar, maple syrup and milk.

Stir until sugar is dissolved.

Bring to boiling point and, without stirring, boil to soft ball stage, 238Β°.

Remove from heat.

Let stand until cool. Add salt and Mapleine or vanilla.

Beat with wooden spoon or pour onto marble slab and work with spatula until candy begins to harden, then place in saucepan and stir over hot water until softened.

Add nuts.

Drop from spoon in 3-inch rounds onto buttered slab or baking sheet.

Makes about 20 pralines.
