Pralines
Pralines is an easy dinner. Made with 1 1/2 c. sugar, 3/4 c. firmly packed brown sugar, 1/2 c. half and half, 1/4 c. plus 2 tbsp. margarine and 2 c. pecan pieces, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine all ingredients in a large heavy saucepan; cook over low heat, stirring gently, until sugar dissolves.
Cover and cook over medium heat for 2 to 3 minutes to wash down sugar crystals from sides of pan.
Uncover and cook to soft ball stage (235Β°), stirring constantly.
Remove from heat and beat mixture with a wooden spoon until mixture begins to thicken.
Drop by tablespoon onto greased wax paper.
Let stand until candy is firm.
Yields 1 1/2 dozen.
