Mix sugar, baking soda and half and half in large saucepan on stove.

Bring to soft boil stage (240Β° on candy thermometer), stirring constantly.

Turn off stove; let set.

When settled, beat with electric mixer until smooth (it will be thin).

Add vanilla and pecans as it thickens.

Spoon out on wax paper.

Makes about 18 pralines.
