Prairie Fire
Prairie Fire is an moderately easy dinner. Made with 4 (16 oz.) cans red kidney beans, 1/2 c. butter or margarine, 8 oz. shredded provolone cheese (about 2 c.), 1/4 to 1/3 c. chopped hot pepper (jalapeños or serranos) and 2 tbsp. minced onion, this recipe delivers authentic, satisfying flavors. Drain beans, reserving 2/3 cup of the liquid.
Mash beans.
In a large skillet, combine beans, liquid, butter, cheese, peppers, onion, garlic and salt.
Heat and stir until mixture is hot and cheese melts.
Transfer to chafing dish or crock-pot.
Serve with chips.
