Potluck Peas
Potluck Peas is an moderately easy dinner. Made with 1/2 lb. bacon, 2 c. celery, finely chopped, 2 c. onion, finely chopped, 2 c. bell pepper, finely chopped and 2 (16 oz.) cans stewed tomatoes (undrained), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Fry bacon in skillet; remove, drain, crumble and set aside. In a small amount of the bacon grease, saute celery, onion and bell pepper until tender.
Add all tomatoes and cook together 15 to 20 minutes on low flame.
Add drained peas, salt and pepper. Cook 10 more minutes on low flame.
Add crumbled bacon just before serving.
