Peel the potatoes and with a melon ball cutter, form as many potato balls as possible with each potato, placing them in cold water to prevent discoloration.

Place potato balls in boiling water (lightly salted) and boil for 4 minutes.

Drain.

Melt butter in saute pan and when medium-hot, add potato balls. Saute until lightly golden.

Serve immediately.

May be prepared up to time of sauteing.
