Potatoes Basque Style
Potatoes Basque Style is an moderately easy dinner. Made with 1/2 c. chopped onion, 1 crushed garlic clove, 2 tbsp. olive oil, 1/4 c. chopped parsley and 1/4 c. chopped pimento, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Saute onion and garlic in olive oil until soft.
Stir in parsley, pimento, pepper and broth.
Remove from heat.
Layer sliced potatoes in broth in skillet.
Bring to a boil.
Reduce heat, cover and simmer about 20 minutes until potatoes are soft. Lift potatoes with slotted spoon onto heated serving dish.
Pour liquid over potatoes.
