Potato Soup
Potato Soup is an moderately easy dinner. Made with 8 to 10 potatoes (depends on size of potato), diced like for potato salad, don't overcook, 1 small onion, 1/2 gal. milk, 1/4 stick margarine and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook potatoes and onion in salt water until tender.
Drain all of water, except small amount.
Add milk and margarine.
Then add chopped hard-boiled eggs.
Cook on low until margarine melts.
Add pepper to taste.
