Potato Soup
Potato Soup is an easy dinner. Made with 5 lb potatoes, cut-up, onion, chopped, 1 can cream of celery soup and 1 lb velveeta cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel and cut potatoes, add chopped onion.
Bring to a boil in water that covers potatoes good.
Reduce heat and simmer until potatoes are very tender.
Add soup and cheese to potato mixture. (Do not drain potatoes.)
Mix well and cook until cheese is melted. Serve with bacon bits and chopped green onions added to each bowl. Crackers or cornbread are a must with this soup.
