Potato Salad
Potato Salad is an moderately easy dinner. Made with 4 to 6 medium potatoes, 1 c. celery, chopped, 2 hard-cooked eggs, chopped, 1 small onion, chopped and 1 pickle, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook potatoes in skins until tender.
Drain and peel.
Cut potatoes into bite size pieces in a large bowl.
While potatoes are still warm, sprinkle with vinegar.
Add celery, eggs, pepper, onion, pickle, salt and pepper.
Blend mayonnaise and mustard together.
With 2 forks, gently toss all ingredients.
Add more mayonnaise, if needed.
Avoid mashing potatoes.
Cover and chill.
