Potato Omelet
Potato Omelet is an moderately easy dinner. Made with 2 lb. potatoes, 1/2 c. olive oil, 1/2 c. red bell pepper, minced, sweet red bell pepper strips and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Peel potatoes and slice thinly.
Rinse in cold water and dry. Salt and pepper.
Saute onion in oil over low heat until lightly browned.
Add sweet pepper and potatoes about halfway through cooking.
Drain and save mixture.
Wipe pan with paper towel.
Add butter and melt.
