Potato Fruit Salad
Potato Fruit Salad is an moderately easy dinner. Made with 1 lb. potatoes, cooked, peeled and cut in 1/2 inch cubes, 1/2 c. pineapple tidbits, 1/2 c. thoroughly drained mandarin orange sections, 1/2 c. white raisins and 1 tbsp. grated coconut, this recipe delivers authentic, satisfying flavors. Combine the first 4 ingredients.
In a small bowl, mix together, the next 4 ingredients.
Add to fruit and potato mixture.
Add more sour cream if mixture is too dry.
Add salt and pepper to taste.
Chill.
Mound on lettuce leaves or serve on a platter.
