Potato Chive Rolls
Potato Chive Rolls is an moderately easy dinner. Made with 2 pkg. active dry yeast, 1 1/2 tbsp. sugar, 1/4 c. warm water, 1 c. sour cream and 1 c. mashed, cooked potatoes, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In cup, dissolve yeast and sugar in water; let stand until foamy.
In large mixer bowl, combine sour cream, potatoes, eggs, salt and 2 cups of the flour.
Add yeast and beat at medium speed for about 4 minutes.
Stir in chives.
Add 2 1/2 cups flour to make a stiff dough.
Turn out onto floured surface and knead just long enough to work in remaining 1/2 cup flour and make dough elastic.
Place in greased bowl and cover with damp cloth.
Let rise until double in bulk (1 1/2 hours).
Punch down dough.
