Potato Candy is an easy dinner. Made with 1 small potato or 1/4 c. dry potatoes, mixed with sugar, 1 tbsp. butter, 1 tsp. vanilla, 1 box confectioners sugar and 2 to 3 tbsp. cream, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mash potato and blend in butter and sugar.
Sprinkle confectioners sugar on waxed paper and roll candy out on it in a rectangle.
Spread with peanut butter; roll up and chill.
