Potato Candy
Potato Candy is an easy dinner. Made with 2 sm. baked potatoes, 1-1/2 to 2 boxes confectioners sugar, 1 tsp. vanilla and crunchy or smooth peanut butter, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel potatoes and mash in large mixing bowl.
Add sugar and vanilla gradually until mixture is consistency of dough.
Roll out on wax paper.
Spread generously with peanut butter.
Roll into log and chill for several hours or overnight.
Slice and store in refrigerator.
May be frozen.
