Potato Candy
Potato Candy is an easy dinner. Made with 1/2 c. cold potatoes, mashed, 4 c. sifted confectioners sugar (or enough to make fondant easy to handle), pinch of salt and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix well, then turn out on a piece of waxed paper and roll into a rectangle about 1/4 inch thick.
Spread with 1/2 cup of peanut butter (creamy or chunky style).
Roll up like jelly roll and chill for about 8 hours.
Cut into 1/4-inch thick slices.
