Potato Candy
Potato Candy is an easy dinner. Made with 1 small potato or 1/4 c. dry potatoes, mixed with sugar, 1 tbsp. butter, 1 tsp. vanilla, 1 box confectioners sugar and 2 to 3 tbsp. cream, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mash potato and blend in butter and sugar.
Sprinkle confectioners sugar on waxed paper and roll candy out on it in a rectangle.
Spread with peanut butter; roll up and chill.
When chilled, slice and serve.
