Potato Candy is an easy dinner. Made with 1 medium potato, 1 box or bag powdered sugar and peanut butter, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil potato in jacket until tender.
Peel potato and mash in large bowl.
Add powdered sugar 1 cup at a time until a firm dough is made.
Roll between waxed paper to 1/4-inch thickness.
Remove top layer of paper.
Put peanut butter on potato dough.
Roll jelly roll style.
Slice into pinwheel candies.
