Potato Candy is an easy dinner. Made with 1 medium potato, 1 box powdered sugar, 1/2 tsp. vanilla and peanut butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Potato boil until soft.
Drain; run through ricer. Cool slightly.
Add vanilla and enough powdered sugar to make pie consistency.
Roll out between wax paper. Spread with peanut butter.
Roll up like jelly roll; slice.
