Potato Cakes
Potato Cakes is an moderately easy dinner. Made with 8 to 12 c. onions, 1 large stainless pot of water (approximately 2 gal. water), 1 c. parsley, 1/2 c. salt and 1 c. potato mix (french's or trio), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix all the ingredients together and form a small cake (pat between hands) and fry.
If batter appears too thick, add more water a little at a time.
This is served at the Kutztown Folk Festival.
Eat with butter or gravy.
Makes 2 1/2 gallons.
