Potato Cake
Potato Cake is an moderately easy dinner. Made with 2 c. sugar, 2/3 c. butter or oleo, 1 c. hot mashed potatoes, 1 c. hot milk and 2 1/2 c. swans down cake flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cream butter or oleo, adding sugar gradually.
Add well beaten egg yolks.
Sift flour with baking powder and spices.
Add to the first mixture a little flour and milk, until all is used.
Beat the batter hard; add spices.
Mix the chocolate with the hot mashed potatoes.
Add the whites of 2 eggs, beaten stiff.
Add chocolate and nuts to the cake batter and bake in three layers in a moderate oven.
