Posh Squash
Posh Squash is an moderately easy dinner. Made with 2 lb. squash (mix varieties, zucchini, crookneck and patty pan), 2 eggs, 1 c. low-fat mayonnaise, 1 tbsp. minced onion (or 1 small onion chopped fine) and 1/4 c. chopped green pepper (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut squash into chunks and steam until tender.
Drain well and set aside.
Beat eggs and blend in mayonnaise; add seasonings. Place squash in 2 1/2-quart casserole and pour mix over.
Put Parmesan cheese evenly on top.
Bake, uncovered, at 375Β° for 25 minutes, or 35 minutes if cold.
Serves 8 to 10.
Can be made ahead and reheated nicely.
