Posh Squash
Posh Squash is an moderately easy dinner. Made with 2 lb. yellow squash, 2 eggs, slightly beaten, 1/2 c. green bell peppers, 1/4 c. chopped onion and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Steam squash until tender; drain thoroughly.
In a large mixing bowl, beat eggs and add remaining ingredients, except buttered crumbs.
Mix real well and pour into a buttered casserole dish. Bake at 350Β° about 20 to 30 minutes.
When it is almost done, cover the mixture with buttered crumbs and let them brown lightly.
